Instructions
- Preheat the oven to 180°C (fan-forced).
- Line a 8×8 backing tin with baking paper.
- In a large bowl, add flour, yoghurt, stevia, lemon zest, salt, vanilla and butter.
- Mix with an electric beater until sandy like crumbs begin to form.
- Press the crumbs into the bottom of the baking tin.
- Bake for 15-20 minutes or until lightly browned.
- In a bowl, whisk together the filling ingredients until it is well combined and frothing slightly.
- Immediately add filling over the top over the dessert base.
- Bake for another 20 minutes or until the filling is set and does not wobble when gently shaken.
- Allow to cool and cut into 9 equal squares.
- To garnish, dust with powdered sugar.
