- Preheat oven to 180 degrees C
- Mix pumpkin and cumin and place on a lined oven tray with the garlic, cook for 25-30 minutes turning once.
- In a large bowl combine spinach chickpeas and coriander.
- Lightly spray a large non stick frypan with oil and place on medium heat
- Grill steak on each side for 3 minutes or until cooked to your liking
- Remove from heat, cover and rest for 3 minutes before slicing.
- For the dressing, squeeze booked garlic out of its skin and mash in a bowl.
- Add the yogurt, lemon juice and honey and mix until combined.
- In a bowl mix spinach leaves, chickpeas and coriander, top with pumpkin and beef and pour over dressing.
