Instructions
- In a small bowl, add corn, green onions, coriander and lime juice. Set aside.
- In a separate bowl, combine cumin and paprika and coat pork slices.
- Warm taco shells in oven (160 ºC) for 6-7 minutes or until crisp.
- Spray a large frying pan with oil and stir-fry seasoned pork for 3-4 minutes or until golden. Remove from pan and set aside.
- Lower to a medium heat and re-coat pan with more oil. Cook onion, stirring, for 3-4 minutes.
- Add capsicum and fry until vegetables have softened (2-3 minutes).
- Return pork to pan and toss for 1-2 minutes.
- Fill taco shells with salsa, lettuce and pork mixture. Enjoy!
