Pork Loin Steaks with Rosemary and Apple Sauce

Ingredients
4 x 125g lean pork loin steaks, trimmed of fat,
600g new potatoes, washed and halved,
300g broccolini,
300g green beans,
1 tablespoon fresh rosemary leaves,
2 tablespoons fresh flat leaf parsley,
3 teaspoons of olive oil,
Cooking Spray,
1/3 cup of apple sauce ,
Instructions
1. Wash the potatoes thoroughly. Cut the potatoes into halves and steam in a steamer for 12 to 15 minutes until soft
2. Wash and trim the beans and broccolini
3. Chop the rosemary leaves and combine with the olive oil in a bowl. Smear the rosemary and oil mixture over the pork steaks
4. Chop the flat leaf parsley and set aside in a bowl
5. In a hot frying pan sprayed with cooking spray, pan fry each pork steak for 4 minutes on each side until cooked through
6. Towards the end of frying the pork, place the broccolini and green beans into a steamer and steam until soft
7. Spread the chopped parsley in a thin layer over a chopping board. Coat both sides of the pork steaks with the parsley
8. Wrap the herb coated pork steaks in aluminium foil to keep them warm. Allow to rest for 5 minutes
9. While the pork is resting, warm the apple sauce in a saucepan over low heat
10. Remove the steamed potatoes, broccolini, and beans from the streamer and serve on a plate
11. Unwrap the pork steaks and serve with the vegetables
12. Remove the sauce from the heat and serve over the pork steaks
