- Cook penne according to packet directions. Drain. Set aside.
- Heat a non-stick pan over medium heat. Spray with oil. Add onion and garlic. Cook until onion softened. Add mince. Cook for 5–6 minutes. Drain off any fat.
- Add wine, simmer until reduced by half. Add tomatoes and olives. Simmer for 5 minutes. Add spinach. Simmer for 2 minutes.
- Toss hot pasta with mince sauce. Divide pasta between serving bowls. Top with parmesan.
