Instructions
- Combine garlic, pepper, parsley and saffron in a large saucepan.
- Add potatoes and 1 cup of water.
- Bring to boil and reduce to a medium heat.
- Cover and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
- Increase heat and remove lid from saucepan.
- Boil rapidly for 2-3 minutes, until liquid is thick and potatoes are coated.
