Zesty Lemon Bars February 7, 2014 By @entwellbeing Zesty Lemon Bars Serves: 9 (1 bar) Time to make: 45 minutes Ingredients Base 1 cup White Flour (Whole Wheat) 1/3 Cup Stevia (Raw) 2 Tablespoon Greek Yoghurt (Plain and Fat Free) 4 Tablespoons Butter (Light, Room temp.) 1 Tablespoon Lemon Zest ½ Teaspoon Vanilla Extract 1/8 Teaspoon Salt Filling 1 Cup Stevia (Raw) 1/3 Cup Sugar 1 Cup Lemon Juice 4 Eggs Nutrition (per serve) Energy: 607kJ Calories: 145cal Protein: 5g Fat: 5g Carbohydrates: 21.2g – sugars: 8.3g Dietary Fibre: 1.9g Sodium: 104.6mg Instructions Preheat the oven to 180°C (fan-forced). Line a 8×8 backing tin with baking paper. In a large bowl, add flour, yoghurt, stevia, lemon zest, salt, vanilla and butter. Mix with an electric beater until sandy like crumbs begin to form. Press the crumbs into the bottom of the baking tin. Bake for 15-20 minutes or until lightly browned. In a bowl, whisk together the filling ingredients until it is well combined and frothing slightly. Immediately add filling over the top over the dessert base. Bake for another 20 minutes or until the filling is set and does not wobble when gently shaken. Allow to cool and cut into 9 equal squares. To garnish, dust with powdered sugar.
