Warm Beef Salad August 29, 2014 By @entwellbeing Warm Beef Salad Serves: 4 Prepration: 10 minutes Cooking Time: 35 minutes Ingredients 1 kg pumpkin peeled and cut into cubes 2 gloves garlic Cooking oil spray 200g baby spinach leaves or mixed leaves 1 tbs cumin 1 can (420g) chickpeas, drained ½ bunch coriander, chopped 500g lean rump steak 200g low fat natural or Greek yogurt Juice of ¼ lemon ½ tsp honey Nutrition (per serve) Energy: 2294kJ Calories: 548cal Protein: 54.2g Fat: 14.2g Carbohydrates: 43.3g – sugars: 23.1g Dietary Fibre: 14.2g Sodium: 377mg Instructions Preheat oven to 180 degrees C Mix pumpkin and cumin and place on a lined oven tray with the garlic, cook for 25-30 minutes turning once. In a large bowl combine spinach chickpeas and coriander. Lightly spray a large non stick frypan with oil and place on medium heat Grill steak on each side for 3 minutes or until cooked to your liking Remove from heat, cover and rest for 3 minutes before slicing. For the dressing, squeeze booked garlic out of its skin and mash in a bowl. Add the yogurt, lemon juice and honey and mix until combined. In a bowl mix spinach leaves, chickpeas and coriander, top with pumpkin and beef and pour over dressing.
