Veggie Sausages with Sun-Dried Tomato Mash October 3, 2014 By @entwellbeing Veggie Sausages with Sun-Dried Tomato Mash Serves: 4 Time to make: 20 minutes Ingredients Cooking oil (spray) 4 vegetarian sausages 1 onion, finely diced 2 free ranged eggs ½ cup 97% fat-free sun-dried tomatoes, chopped 5 large potatoes, washed and peeled 2 tablespoons fresh herbs Large green salad, to serve Nutrition (per serve) Energy: 1450kJ Calories: 347cal Protein: 21g Fat: 12g – saturated 2g Carbohydrates: 35g – sugars: 8g Dietary Fibre: 6g Sodium: 180mg Calcium: 40mg Iron: 2.5mg Instructions Boil potatoes, mash and season as desired. Spray a large frying pan with oil. Over a medium heat, cook diced onion until soft and transparent. Add eggs and onions to mash and stir in herbs and sun-dried tomato. Lightly coat a non-stick pan with oil and spoon in mash mixture. Over a medium heat, cook each side for 5-6 minutes. In another non-stick frying pan, cook vegetarian sausages. Slice sausages into quarters, cut mash into quarters and serve with salad.
