Strawberry Mousse October 15, 2013 By @entwellbeing Strawberry Mousse Serves: 6 Time to make: 15 mins Ingredients ¼ cup boiling water 3 eggs (whites only) 2 tablespoons of caster sugar 3 teaspoons of gelatine (powdered) 550g tub of reduced-fat strawberry yoghurt 250g strawberries (hulled and halved) Nutrition (per serve) Energy: 388kJ Calories: 92.38 cal Fat: 0.80g – saturated: 0.50g Carbohydrates: 12.70g – sugars: N.A. Dietary Fibre: 2g Sodium: 90mg Instructions Sprinkle boiling water over gelatine. Whisk with a fork until the gelatine has completely dissolved. Set aside to cool for 10 minutes. Using an electric mixer, beat egg whites and sugar forming soft peaks. Place yoghurt in a bowl and gradually add gelatine mixture, whisking until well combined. Fold egg white mixture through yoghurt mix until just combined. In a six cup-capacity bowl, spoon in mixture and cover. Refrigerate for 4 hours or until set. Top mousse with strawberries and serve.
