The juice of 1 lemon
1 tablespoon rice bran oil
1 tablespoon thyme
Pinch of salt
Pinch of pepper
3 cloves of garlic
6 x 150g skinless chicken breast
Canola oil spray To serve
1 cup of cooked brown rice
Nutrition (per serve)
Combine lemon juice, oil, thyme, salt, pepper and garlic in a bowl and mix well.
Pour mixture over chicken and coat well.
Cover and set aside for 5 minutes
Place a ridged grill pan over medium heat and lightly spray with oil.
Cook chicken for 5-6 minutes on each side until golden-brown and breasts are cooked through.
