Pork Tacos with Lime and Corn Salsa July 2, 2014 By @entwellbeing Pork Tacos with Lime and Corn Salsa Serves: 4 (3 shells) Time to make: 30 minutes Ingredients 420g of corn kernels, drained 6 green onions, diced 2 brown onion, diced 2 red capsicums, diced 6 cups lettuce, shredded 3 tablespoons fresh coriander (chopped) 2 tablespoons lime juice 1 tablespoon cumin (ground) 1½ tablespoons paprika (ground) 600g pork steaks, thinly sliced 12 taco shells Cooking oil (spray) Nutrition (per serve) Energy: 2050kJ Calories: 490cal Protein: 41.7g Fat: 14.5g – saturated: 2.7g Carbohydrates: 43.9g – sugars: 9g Dietary Fibre: 10.5g Sodium: 401mg Calcium: 62mg Iron: 4mg Instructions In a small bowl, add corn, green onions, coriander and lime juice. Set aside. In a separate bowl, combine cumin and paprika and coat pork slices. Warm taco shells in oven (160 ºC) for 6-7 minutes or until crisp. Spray a large frying pan with oil and stir-fry seasoned pork for 3-4 minutes or until golden. Remove from pan and set aside. Lower to a medium heat and re-coat pan with more oil. Cook onion, stirring, for 3-4 minutes. Add capsicum and fry until vegetables have softened (2-3 minutes). Return pork to pan and toss for 1-2 minutes. Fill taco shells with salsa, lettuce and pork mixture. Enjoy!
