Moroccan Chicken Casserole December 12, 2014 By @entwellbeing Moroccan Chicken Casserole Serves: 4 Time to make: 5min (Prep) + 25min (Cook) Ingredients 4 Chicken Breasts 400g can Chopped Tomato 400g Chickpeas (Drained and Rinsed) 2 Medium Courgettes (Thickly Sliced) 1 Onion (Sliced) 2 Tablespoons Harissa Paste 1 Tablespoon Honey 1 Teaspoon Ground Cumin 1 Tablespoon Olive Oil Nutrition (per serve) Energy: 1230.6kJ Calories: 293cal Protein: 36g Fat: 6g – saturated: 1g Carbohydrates: 2.2g – sugars: 10g Dietary Fibre: 4g Sodium: 0.9g Instructions Season the chicken breast with cumin and black pepper. Heat oil in large frying pan and cook the chicken together with the onions for 4 mins. Turn the chicken over, and then cook for another 3 mins. Add the tomatoes and 250ml water into the pan, and then add the honey, harissa, chickpeas and courgettes. Bring to simmer and cook for 15 mins until sauce has thickened and chicken is tender. Ready to serve!
