Mini Berry Protein Cheesecakes January 16, 2015 By @entwellbeing Mini Berry Protein Cheesecakes Serves: 8 Time to make: 40 minutes Ingredients 170g of low fat Greek yoghurt 2 tablespoon of low fat cottage cheese 1 tablespoon of coconut flour ¼ cup of berries (your choice) 2 fresh organic eggs ¼ cup of vanilla whey protein powder Nutrition (per serve) Energy: 246.54kJ Calories: 58.7cal Protein: 6.5g Fat: 1.6g Carbohydrates: 4.4g – sugars: 2.2g Dietary Fibre: 2g Sodium: 7mg Calcium: 13mg Iron: 1.3mg Instructions Preheat oven to 170’C. Blend the yoghurt, cottage cheese, coconut flour, eggs and protein powder in a food processor until smooth. Stir through the berries. Spoon into non-stick moulds or a non-stick cupcake baking tray. Bake for 35 minutes. Remove from the oven, flip out of the tray and let cool.
