Lime and Lychee Sorbet January 22, 2014 By @entwellbeing Lime and Lychee Sorbet Serves: 4 Prep time: 15 minutes + Freezing Ingredients 3 x 400g Canned lychees in syrup 50g Sugar (Caster) 1 Egg White 2 Limes (1 Juiced, Zest from 2) Nutrition (per serve) Energy: 537kJ Calories: 137cal Protein: 16g Fat: 0g – saturated 0g Carbohydrates: 35g – sugars: 35g Dietary Fibre: 1g Sodium: 40mg Instructions Drain two of the three cans of lychee syrup into a small pan over a low heat. Add caster sugar and dissolve and bring to boil for 1 minute. In a food processor, finely chop the drained lychees. Pour in lime juice and syrup with the blade still whirring. Pour into 1 litre container and freeze for a minimum of 6-7 hours or until solid. Break up the frozen mix and return to the processor. Add egg whites, whizz until a thick, and smooth. Add zest from 1 lime and refreeze mixture again. (For best results freeze overnight) Serve in scoops with remaining lychees and zest to garnish.
