Italian-Style Beef Stew August 9, 2013 By @entwellbeing Italian-style Beef Stew Serves: 4 Time to make: 30 mins Ingredients 1 sliced onion 1 sliced garlic clove 2 tablespoons of olive oil 300g of thinly sliced, beef stir-fry strips 1 yellow pepper, deseeded and thinly sliced 400g of chopped tomatoes Sprig of chopped rosemary Handful of pitted olives Nutrition (per serve) Energy: 945kJ Calories: 225cal Protein: 25g Fat: 11g – saturated: 3g Carbohydrates: 7g – sugars: 6g Dietary Fibre: 2g Sodium: 870mg Instructions Heat oil in a large saucepan, cook onion and garlic until softened and turning golden. Add beef strips, pepper, tomatoes and rosemary, bring to boil. Simmer for 15 minutes until the meat is cooked through. Add some boiling water if needed. Stir through olives and serve with a polenta or mash.
