Healthy Creamy Mash February 27, 2015 By @entwellbeing Healthy Creamy Mash Serves: 4 Time to make: 15 mins (Prep) + 12 mins (Cook) Ingredients 1 kg Desiree Potatoes (peeled and chopped) ½ cup Carnation Light and Creamy Evaporated Milk 2 tsp Light Canola Spread 2 tbsp Chives (chopped) ¼ cup Flat-Leaf Parsley (chopped) Nutrition (per serve) Energy: 742 kJ Calories: 176.6 cal Protein: 6.7 g Fat: 1.5 g – saturated: 0.3 g Carbohydrates: 31.4 g – sugars: 0 g Dietary Fibre: 3.8 g Sodium: 50 mg Instructions Put potatoes in a large saucepan of salted water and bring to the boil. Cook until potatoes are tender and then drain the water. Lower the heat and return potatoes to pan. Add evaporated milk and spread then mash until potatoes have a smooth consistency. Stir in chives and parsley, then serve.
