Garlic Baby Potatoes with Saffron February 20, 2015 By @entwellbeing Garlic Baby Potatoes with Saffron Serves: 4 Time to make: 30 mins Ingredients 600g baby potatoes, washed, halved if large 2 cloves, crushed garlic 2 tablespoons flat-leaf parsley (finely chopped) Pinch of saffron ½ teaspoon ground black pepper 2 teaspoons olive oil 1 cup water Nutrition (per serve) Energy: 537kJ Calories: 128cal Protein: 3.8g Fat: 2.5g – saturated: 0.3g Carbohydrates: 20.3g – sugars: 0.8g Dietary Fibre: 3.4g Sodium: 7mg calcium: 13mg Iron: 1.3mg Instructions Combine garlic, pepper, parsley and saffron in a large saucepan. Add potatoes and 1 cup of water. Bring to boil and reduce to a medium heat. Cover and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally. Increase heat and remove lid from saucepan. Boil rapidly for 2-3 minutes, until liquid is thick and potatoes are coated.
