1 cup self-raising flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
2/3 cup skim milk
1 egg, lightly beaten
cooking oil spray
1 large banana, cut into 24 slices
low-fat ice-cream, to serve

Sift flour, sugar and cinnamon into a large bowl. Whisk in milk and egg until smooth.
Spray a frying pan with oil. Drop 2 tablespoons of batter into pan. Top with 3 slices of banana. Cook over medium heat for 1–2 minutes, until bubbles appear on surface. Flip and cook for another 1–2 minutes. Repeat process to make 8 pikelets. Serve with ice-cream.
