Chocolate Muffins with Warm Chocolate Custard October 17, 2014 By @entwellbeing Chocolate Muffins with Warm Chocolate Custard Serves: 6 Time to make: 10 minutes (Preparation) 10 minutes (Cooking) Ingredients Muffin 100g Self-Raising Flour 50g Caster Sugar 100mL Skim Milk 1 Egg 1 Tablespoon Cocoa Powder ½ Teaspoon Bicarbonate Soda 2 Tablespoons Sunflower Oil Custard 300g Low-Fat Custard 25g Dark Chocolate (Chopped) Nutrition (per serve) Energy: 900kJ Calories: 215cal Protein: 5g Fat: 8g – saturated 2g Carbohydrates: 32g – sugars: 17g Dietary Fibre: 1g Sodium: 590mg Instructions Pre-heat oven to 170°C (fan forced). Lightly grease a 6-pan muffin tray with a drop of oil. Add flour, bicarb soda, caster sugar to a large bowl. Sieve in the cocoa and stir to combine. Beat the egg, milk and oil together in a jug. Make a well in the dry ingredients and pour in the mixture, stirring quickly. Spoon batter into the muffin tray and bake for 15 minutes (until risen and firm). Using a microwave, heat the custard according to instructions on packaging. Add chocolate pieces and stir until smooth. Pour custard over muffins to serve.
