Blackberry and Apple Crepes January 31, 2014 By @entwellbeing Blackberry and Apple Crepes Serves: 4 (2 crepes) Time to make: 5 minutes (Hands-on) 40 minutes (Cooking) Ingredients Basic Crepes 200mL skim milk 100mL cold water 2 free ranged medium eggs 1 cup plain flour Cooking oil (spray) Filling 4 apples, cored, peeled and sliced 300g blackberries (fresh or frozen) 1 cup low-fat Greek-style yoghurt 2 tablespoons caster sugar Vanilla extract (2-3 drops) Pinch cinnamon (ground) Nutrition (per serve) Energy: 1645kJ Calories: 394cal Protein: 13.9g Fat: 6.4g – saturated: 2.2g Carbohydrates: 63.5g – sugars: 36.5g Dietary Fibre: 8.8g Sodium: 116mg Calcium: 226mg Iron: 1.8mg Instructions Crepes Sift flour into a bowl. Lightly beat eggs and whisk in milk and cold water. Add to flour and whisk until smooth. Over a medium heat, lightly spray a non-stick frying pan. Add 4-5 tablespoons of batter and swirl around pan to coat. Cook for 1-2 minutes on each side, or until golden. Transfer to a plate, covering with a thick tea towel to keep warm. Repeat to make 7 more crepes. Filling In a pan, add 2 tablespoons water, sugar, vanilla and cinnamon. Cover and cook over a medium heat for 10 minutes, or until apples are softened. Add blackberries and cook for an additional 5 minutes. Top each crepe with an 8th of the mixture and fold over. Serve two crepes per person with yoghurt and any extra filling on the side.
